    The Bath Good Food Awards 2011 were held in the sumptious surroundings of the Bath Guildhall and were well attended by people from all over the food industry in Bath.  Organised by Guide2Bath and The Pig Guide, businesses and individuals were celebrated and presented with awards in over 20 different categories.  The evening was fabulous, with wines provided by Great Western Wine and great foodie conversation all night!  The awards were a brilliant way to celebrate and recognise the amazing work that producers, chefs and business owners do in Bath and hopefully this will now become an annual event!  Look out for the Bath Good Food Awards stickers in the windows of the nominees and winners - if you see one you know you’re in for a treat!!

    Country Cupcakes

    I recently spent a very pleasant Saturday afternoon at Bailbrook House, Bath - doing something that I have wanted to do for a very long time; learn how to ice cupcakes (properly!)!

    My forays into the art of the cupcakes have so far been mixed, either my sponge is not quite right, or my icing just ends up as a brightly coloured splodge and covered in sprinkles, but I hoped that Celia would be able to teach me the ‘art’ of cupcake decoration!

    We were seated in one of the original rooms of Bailbrook House with the sun pouring through the sash windows and a plethora of cake-decorating goodies laid out in front of us, we were each given a box of six ‘naked’ cupcakes.  Celia then taught us six different methods of icing including several different ways to pipe buttercream, as well as how to use fondant and glaze icing.  After each demonstration we were able to use our creativity and decorate each cupcake with colourful icing and as many different sprinkles, decorations and glitters as we wanted - with some beautiful, and some interesting results!

    A fabulous way to spend an afternoon, everyone comes away with new skills, and six beautifully presented cupcakes to enjoy!

    Celia’s next cupcake schools are on 12th November and 3rd December, the latter is a Christmas special!  Further information can be found here.  Country Cupcakes and sister company The Bath Cake Company now have a shop that is open on Saturday mornings in Lansdown Mews - they sell cakes and everything you need to bake and decorate cakes at home; worth checking out for the glitter selection alone!!

We have recently purchased some beautiful new bicycles, and exploring countryside pubs within cycling distance of Bath is quickly becoming a favourite activity for the weekends!  Our first stop, after much deliberation was The Swan at Swineford.  A beautiful old pub, part of the Bath Ales group, with a large grassy garden, close to a fast road, but as we found, you end up enjoying yourself too much to hear the sound of cars whizzing by! 

    We chose pints of Bounders to refresh ourselves after a speedy cycle along the Bath-Bristol cycle path, and browsed the small menu in the lovely sunshine.  Mr L selected ‘Honey roast Wiltshire ham with a brace of peppered fried eggs’, and I the ‘Swan steak mince burger topped with smoked bacon & cheddar’, both were served with chunky chips, and the burger was also served with a rather sad looking salad garnish…

    The ham was thick-cut and the eggs deliciously runny; the burger was lightly spiced, clearly handmade from good quality ingredients - seriously tasty! 

    For dessert we ordered the chocolate brownie and a slice of gooey pecan tart, both really rich, delicious and served with proper vanilla icecream - a proper treat! (justifiable if you cycle from Bath!!)

    The Swan is a brilliant gem in a tiny village, the perfect venue for a lazy lunch in the sunshine, we’ll be back…

    This morning we made a visit to the Green Park Station market in Bath - a fabulous market full of local producers selling all sorts of delicious food!  We haven’t visited for a good few weeks, so when I saw the sunshine beaming through my window shutters this morning I felt that today would be perfect for a return visit!  As always, the atmosphere was buzzing, people seem to really enjoy shopping at this market - the produce always looks so fabulous!  We came away with bags full of shopping - veggies for dinner, pasties for lunch, a chili plant, oh, and some tartes! (couldn’t resist - egg custard and Mississippi mud!!)

    My day at The Bath Priory

    I recently had the pleasure of meeting the charming Sam Moody, Head Chef of the prestigious Bath Priory Hotel restaurant and I was very excited, and very surprised, to receive an invitation to come and spend the day in his kitchen shortly afterwards!

    I have never, ever worked in a professional kitchen.  I like to cook, but I tend to suffer from a condition I like to call ‘food rage’ if things don’t quite go right.  I was instantly worried.  The Bath Priory is a famous restaurant, with multiple rosettes and awards, Executive Chef Michael Caines is a household name, and his Head Chef Sam is making waves in the industry having recently been awarded an Acorn Award! 

    However, I needn’t have worried – as I was being shown around the impressive looking kitchens of The Priory the rest of Sam’s brigade shouted reassuringly cheery hellos to me over the noise of the kitchen.  I got dressed up in some chef whites and was given a series of tasks to complete – grating cauliflower for dinner service, chopping shallots to an impossibly small size, and preparing lemons, badly (Sorry about that!).  It turns out that what I thought were ‘good’ knife skills, are in fact ‘poor’ knife skills when compared to this talented gang of chefs!

    The heat in the kitchen was immense, the great big stoves were roasting hot, pots of water, stock and sauces were bubbling away, and the pastry section was churning out an impressive number of freshly baked loaves of bread.  The kitchen was buzzing, full of activity, and this was all by 9am on a Saturday morning  - I was beginning to feel out of my depth!

    Sam would call me over every so often to show me some of the produce he was preparing, beautiful, fresh, line-caught fish – Turbot, Bass, as well as plenty of Lobsters.  Then came the grouse, Chef seemed pretty excited about this – the previous day having been the ‘Glorious Twelfth’ - official start of the hunting season here in the UK.

    I felt privileged to be shown around the grounds of The Priory Hotel, the kitchen gardens are well stocked, and ingredients can often be found on the menu in the restaurant, a particular highlight for me was the mulberry tree, a very rare tree with luscious tasting fruits that were used over the weekend to accompany the fresh grouse.  I was also lucky to be given a sneak peek at the handsome dining rooms at the Priory, my very favourite featured the Chef’s table in The Wine Library, but all dining rooms are stunning, facing south over the beautiful gardens.   

    As lunch service turned into evening service the pressure and activity mounted, the pastry section prepared their many pots of ice creams and sorbets, and the front of house team readied the pass.  Guests were served canapés of crispy lamb belly topped with olive tapenade, and smoked salmon mousse topped with wasabi , micro herbs and tiny balls of pickled cucumber – light and delicious!   Orders were called out and dishes were served with impeccable timing and precision – Sam prides himself on making sure that every plate of food leaves the kitchen looking consistently perfect.  Scallops from the Signature menu, goose liver terrine, squid with mango and apple, smoked salmon, and veal sweetbread ravioli all looked beautiful and smelt delicious.  The kitchen was a hive of activity, but felt calm and focussed, communication was slick, and the air was full of busy chefs shouting ‘oui!’ 


    My day in the Priory kitchens was amazing – I have always wondered what really happened behind those doors… the chefs work so hard, and they are so proud of what they produce, and rightly so!  I will now fully appreciate every tiny detail on my plate when I eat in top restaurants – the effort and skill that goes into creating even what appears to be a simple accompaniment is incredible, and I really have been left stunned by the plates of food that this kitchen puts out.  Go and eat at The Bath Priory – you really will not be disappointed!
